To celebrate its new Dark Wasabi flavour, expected to be in stores this July, Lindt Excellence partnered two culinary masters – Lindt master chocolatier, Dimo Simatos, and NOBU Cape Town executive chef, Fred Faucheux – to explore and create a selection of recipes at this year’s Cape Town Good Food & Wine Show.
Lindt Excellence range is described as the ultimate chocolate pleasure, with every piece created by Lindt’s master chocolatier with unmatched expertise, combining the finest dark chocolate with distinctive flavour combinations.
Taking inspiration from the Far East, Lindt Excellence invites chocolate-lovers to discover an entirely unique and unexpected taste experience with its latest flavour sensation – Lindt Excellence Dark Wasabi. It presents a contrasting sweet and sharp flavour experience which will both surprise and excite.
Simatos shared the secrets of Lindt Excellence’s spicy creations (Excellence Dark with a Touch of Sea Salt, Dark Chilli and the new Dark Wasabi) with Faucheux, who in turn prepared recipes inspired by Lindt Excellence flavours.
“Working with new and exciting flavours is what I love most about cooking, and being able to work with chocolate that contains some of my favorite spices – Wasabi, Chilli and Sea Salt – has introduced me to some brand new taste combinations,” says Faucheux.
Faucheux prepard Whitefish sashimi and dry miso enhanced by Lindt Excellence Dark with a Touch of Sea Salt chocolate, topped off with olive oil, yuzu juice and Maldon sea salt; followed by the Prawn yuzu anticucho, treated with a Lindt Excellence Dark Chilli chocolate sauce and vegetable shavings; and finally a beef fillet with a white sesame and Lindt chocolate dressing accompanied by Sake Green Vegetables and Lindt Excellence Dark Wasabi chocolate shavings – a dish which will also be available as part of NOBU’s Winter Menu 2012 (Beef Fillet with Wasabi Chocolate).
Added Simatos, “Lindt Excellence chocolate creates the best flavour combinations to excite and intrigue and working with a chef of Fred’s creative calibre has been truly inspirational.”
In addition, Lindt created four other recipes for attendees to take home and replicate in conjunction with the spicy Lindt Excellence range. These easy to follow gourmet creations include Sea Salt Chocolate Molleux with Cherry and Yogurt Sorbet; Cured Salmon with Pickled Chilli & Wasabi Mayonnaise and Wasabi Chocolate Maki Rolls, sure to delight foodies and chocolate lover alike.
